I made these over the weekend and they were not only easy to make, but quite filling and very refreshing.  Great for a light lunch or even a snack on days you just don’t know what to make or eat.  I found the recipe while reading through a People magazine and it caught my eye because apparently this dish was created by the chef who guided Beyonce and Jay-Z on their 3 week vegan diet which helped them both shed a lot of weight at that time.  Who says you can’t eat like a celebrity?

Ingredients:

2 cups walnuts
1 1/2 tbsp ground cumin
1 tbsp ground coriander
2 tbsp balsamic vinegar
1 tbsp low sodium soy sauce (or tamari)
1/8 tsp paprika
1/8 tsp garlic powder
1/8 tsp freshly ground pepper

6 romaine lettuce leaves
1 avocado, chopped
1/2 cup cherry tomatoes, halved
1/2 tbsp dried parsley
sea salt
juice of 1/2 lime

 

Instructions:

  1. Combine the walnuts and next 7 ingredients in a food processor and pulse 6-7 times until crumbly but not over blended.
  2. Spread the walnut mixture evenly on the lettuce leaves, which serve as your taco “shells”. Top with chopped avocado, tomatoes, parsley, sea salt and freshly squeezed lime juice.
