I have posted countless quinoa recipes on this site, but this, I must say, is a FIRST.  I had never even tried red quinoa until one of my students brought some into the studio the other day and had me try her quinoa salad.  I was hooked after the first bite!  I literally ran out after class, drove to our local health food store and bought the ingredients to make the salad as soon as I got home!!  It is absolutely delicious.  With so few ingredients, it is so easy to make and the red quinoa has a very different taste than the traditional one.  A nuttier, heartier taste which has, I think, become my new addiction.  Serve this with lettuce wraps day or night and you’ll have a tasty and satisfying meal on your hands.  Thanks Sonia for sharing this recipe with me, and in turn, enabling me to share it with all my followers!!!


1 cup red quinoa (cooked according to package directions)
2 green onions, chopped
2 tomatoes, chopped
chopped fresh parsley (according to taste – I used LOTS!!)
sea salt & black pepper (to taste)
extra virgin olive oil (to taste)
lemon juice (to taste)


Wait for the quinoa to cool down.  Mix everything together in a bowl and ENJOY!!!
