Welcome to my new and improved website! It’s the first full day of Spring and what better time to unveil a new beginning than on this day! As my business has grown, so have my ideas and it was time to change the look and feel of my site. I have added my teaching schedule to the home page which will automatically update every time a class is added or has been changed. You will still continue to find information about my services and be able to subscribe, by email, to my site so that you receive a message every time I publish a new post on this site. The gallery has also been updated to reflect my Instagram feed so that you are seeing more recent photos as opposed to old ones that had been on the same page for years!! I hope you are as excited about this website as I am.
It’s hard to believe that it’s already been almost two years since the launch of my initial website and even harder to swallow the fact that I have been blogging now for over 5 years! I want to take this time to thank you, my loyal followers, who continue to read what I write. I will do my best to continue sharing recipes, tips and just general information regarding health and fitness. I encourage your feedback and welcome your questions.
Since it is Monday, I am posting a Meatless Monday Recipe, but for today, I dug deep into the archives and resurrected one of the very first recipes I ever posted on my original blog page. I still get a lot of people asking me about this recipe so I thought it would be a great idea to share it again.
Chickpea and Quinoa Salad
4 cups cooked Quinoa
1 can drained chick peas
1 cup sliced roasted red pepper (or option to swap for cherry tomatoes)
2 cups fresh chopped spinach
2 tbsp pure virgin olive oil
Juice of 1 lemon
Red pepper flakes
Sea salt & pepper to taste
Mix together while quinoa is still warm. Enjoy for lunch or dinner.
